So, I was having a major sweet tooth the other day and instead of going down to our local Yogurt Shack, I figured I'd make a cake with the new Stevia cookbook I got for Gabe. This cake has no sugar in it and only uses ONE stick of butter in the entire thing! how cool is that!
I started with the batter of course and I had to change the recipe a little bit. It asked for Buttermilk Powder, and the stores around here don't sell it, so i used regular buttermilk liquid form and crossed my fingers it would still work if I took out a little bit of the water it called for also. It did! The cakes turned out great! I wish I had a cooling wrack.
I cut the top off one of the cakes so that it would be level when I frosted it.
I then made the frosting. I made a cream cheese vanilla frosting but it had the taste of cream cheese way too much, and my family knows I don't like that taste. So I added a little more vanilla, a pinch of stevia, and cocoa powder and made it into a chocolate frosting. Here is the final result!
I put the cake on a plate, covered it with a huge glass bowl that we had, because we do not have one of those cake platters that has a lid, and I put it in the fridge overnight. It was soft and fluffy last night, about to fall over on itself and this afternoon it was firm, still fluffy, but perfect!
I had to try a piece! It tastes exactly like any other chocolate cake would taste like if you were using regular table sugar, which is what i was going for. The best thing is that Gabe liked it too!

Stop it. Just stop it with the baking....at least until I visit again.
I could eat that whole thing and throw in those cream puffs too!
